No. The file is read and written with pdf-lib in your browser's memory and is never sent to a server.
Only document-level metadata is removed. EXIF inside embedded images, annotations, and revision history are out of scope, and a password-protected PDF cannot be read in the browser. Timestamps are written as the Unix epoch rather than the current time, so one identifying timestamp is not swapped for another.
Document properties routinely retain the original author's name, an internal file path, the software version used, and an exact creation time. Those fields are easy to miss in a reader but travel with the file, which makes them a common source of disclosure when submitting, tendering, or publishing documents.
